Day 176

One of the most delicious and healthiest meals is stir fry.  And it's especially easy if you have lots of veggies in your fridge that you need to use up quickly.  Our grocery store had all peppers on sale for less than $1 each so I loaded up on Sunday.  I normally only get green peppers because they're always cheap and the rest are ridiculously expensive, so I wasn't going to let the chance to switch it up pass me by.  So here is the delicious dinner:


Look at those delicious fresh veggies.  There's red, yellow, and orange peppers along with yellow squash, snap peas, broccoli, carrots, and about half of a white onion.


Yum.  Just throw it in the pan with a tiny bit of olive oil (left over from sauteing the onion) and drizzle with teriyaki sauce.  Put the lid on until the veggies are to your desired crunchiness and enjoy!  I served it with some egg rolls from the freezer section, duck sauce (of course!), and jasmine rice cooked with one chicken bouillon cube and a splash of teriyaki sauce.
