Today's another healthy eating post. However, I didn't particularly love this dish (John did) so I'm not going to post the entire thing. If you want the recipe, let me know and I'll send it to you.
Red peppers, corn, jalapenos, and red onion.
Avocados and lime juice.
Tilapia fillets cut in pieces.
Stick 'em in some corn meal/salt/pepper.
Cook 'em up.
Add in the avocados.
Put it all together on 2 broiled 6-inch corn tortillas, along with a bit of angel hair coleslaw (just the cabbage and carrots, don't actually make it into coleslaw).
It was pretty good, just not my favorite. All of this was only 470 calories.
