Tonight for dinner I made a delicious Spring-Green Risotto from a new blog I've found called Annie's Eats.
I'm a sucker for risotto. It's creamy yet light (normally from the lemon juice), filling yet it doesn't drag you down, and I would consider it to be a pretty healthy food, so long as you don't load it up with butter, tons of cheese, and fatty meats.
This recipe was great. I used low-sodium chicken stock and the addition of all the veggies made it great.
It was the first time I'd cooked with leeks before. However, I was watching Ina on the Food Network today and it was just perfect. She was making something with leeks so I knew exactly what to do.

Unfortunately, my aforementioned phone problem still has yet to be resolved, so the pictures of the risotto prep, cooking, and final product are unreachable. Wonderful technology.
Regardless, if you like risotto and would like one with lots of delicious green veggies, I highly recommend this recipe. It would also be great with some added rotisserie chicken or prosciutto.
