My friend, Becky, and her mom, Linda, make these ah-mazing cheesy sausage english muffins. The first time I had them was at Linda's house after crashing at her and her husband's house. Linda's my mom's best friend and they've always been apart of our family, so every once in a while I would call them up and see if I could just get away from my apartment and come and spend some wonderful time with them. I woke up that morning and smelled these delicious little morsels. Luckily, Becky posted the recipe for them not too much longer. So this morning at 6AM I decided I was going to try to make them.
Brown the sausage. I only used one package of Jimmy Dean Regular Breakfast Sausage.
Add cream cheese and Velveeta. This was a guessing game as to how much Velveeta to use so I just cubed some up and put it in until it looked right. Melt the cheese. You can add a can of Rotel, too.
I know this picture doesn't look super appetizing. Sorry about that. Put some shredded cheese ontop. Their recipe says to put shredded cheddar on all of them. However, it was 6AM and I forgot to pickup a cheddar block (I like to shred my own, it just tastes better and has less starch), so I used the last little bit of my pepper jack block. Stick 'em in the oven until the muffins are crispy and the cheese is melted. Enjoy!
They are so yummy and any variation would be delicious! I haven't made those in a while, think it might be about time to make another batch. :)
