Today was a soup day. But not just any kind of soup. It was a homemade soup day. I needed a soup that would warm me from the inside out. John went back to Denver last night and I just needed some comfort food. So, I had found a new recipe on The Pioneer Woman's blog. It was for Corn Chowder with Chillies. If that doesn't sound warm and comforting I don't know what does. Here's the website for it, because it was ah-mazing.
First you cut up some bacon and throw it in the pot. Cook it up until the fat starts to render (I use pretty lean bacon). Then add diced onion and butter and cook until tender.
Add 4 cups of corn. Cook for a few minutes.
Add chicken stock, cream (it calls for heavy cream but I never do that--I used light cream), 2 diced chipotle peppers in adobe sauce, and 1 can of green chili peppers. Simmer.
Serve it up. I added chopped scallions. Talk about delicious, easy, and comforting. Plus, the only thing that you have to clean up is the cutting board, knife, and pot that you cook the soup in. I will definitely be making this a staple soup.
